What Makes Our Ceremonial Matcha Grade Exceptional?
Our Ceremonial Grade Matcha is crafted exclusively for high-end tea ceremonies, specialty beverage chains, and luxury retail brands. Every step of our cultivation and manufacturing process is engineered to maximize L-theanine content and preserve natural chlorophyll.
1. 100% First-Harvest & Authentic Yabukita Cultivar
We pick exclusively first-harvest tea leaves (Ichibancha) during the early spring window (April to early May). Grown from authentic Japanese Yabukita bushes, these young, tender shoots contain the physiological peak of amino acids, antioxidants, and L-theanine. This yields an exquisite taste profile with deep umami, lingering natural sweetness, and zero astringency.
2. Traditional 21-Day Shading at 1,500m Altitude
21 to 25 days before harvest, our tea fields are covered with black shading nets (Tana technique), blocking over 90% of direct sunlight. This light deprivation prevents L-theanine from converting into bitter polyphenols, while dramatically accelerating chlorophyll synthesis. The high altitude of Mộc Châu further slows leaf growth, locking in delicate aromatic compounds and producing a signature, vibrant emerald green hue.
3. Pure Tencha Processing & Precise De-Stemming
Unlike commercial green tea powders milled from whole dried leaves, our Ceremonial Grade is produced strictly from Tencha. Immediately after harvesting, fresh leaves undergo deep steaming (Fukamushi) to arrest oxidation and lock in vibrant color. The leaves are then dried, passed through air-separation equipment, and meticulously de-stemmed. Fibrous veins and stems are completely removed, leaving 100% pure, nutrient-dense leaf flesh (maruma).
4. Slow Granite Stone-Milled to Micro-Fine Perfection
To protect heat-sensitive nutrients and delicate aromatic volatile oils, our Tencha is ground using traditional granite stone mills in climate-controlled cleanrooms. Rotating at slow speeds to keep friction heat well below critical thresholds, each mill yields only 30 to 40 grams per hour. The resulting powder features an ultra-fine particle size of 5 to 10 microns (800–1000 mesh), dissolving effortlessly in warm water to form a silky, long-lasting jade micro-foam.
